Welcome, caymancathy,
I see that you're not coming to Cayman on a cruise ship, but you are just trying to plan your Stingray City trip around a day with the fewest cruise ships in port. Not a bad plan! I think that some of the others who read your post might have misunderstood and thought you were coming by cruise ship.
Anyway, I don't see why it would really matter whether you go morning or afternoon, but I think Captain Jack's point about the mornings being calmer is probably very true, depending on the day, of course.
Another suggestion that I would make, since you are staying on Cayman and not just coming for one day, is to look at the weather forecast once you arrive on the island. Even if you have had the trip scheduled well in advance, if you think the day you have scheduled will be rough weather, I would definitely try to reschedule with Soto's for a better day, even if it means there are more ships in port. Since you're going with Soto's, you won't have crowds on your boat, anyway. Stingray City on a calm day is much better than on a day with rough, choppy water.
Now, choosing which day to hit the shops in Georgetown based on how many cruise ships are in port is an even better idea!
