Bar none, the best and most creative sushi in the Cayman Islands, if not the entire Caribbean. Live music on some nights. Located at Cayman Beach Suites (formerly Hyatt) on Seven Mile Beach. Map 3/C-9. Phone: 949-1234.
Few Cayman Islands bars or lounges have been as successful at dominating the market of young, affluent, attractive, trend-conscious singles as Bamboo at Grand Cayman Beach Suites. Their unique upscale ambiance, with its ultramodern Asian-infused décor piercingly beckons the rich and famous, though their prices are not any higher than other comparable upscale restaurant lounge bars in the Cayman Islands.

Bamboo TIP idea - Be sure to get there early — I recommend no later than 6-7pm. Bamboo does not accept advance reservations and they are extremely popular among locals and visitors alike.

The entire place is beautifully decorated in a very unique upscale theme.

You won't find a more diverse selection of the very finest fresh fish anywhere else on the planet.

Master sushi chef Kaz is the genius behind many of their finest creations.

Assistant sushi genius, Ogie. Very Happy

The bar area is a fun place to meet people and mingle with the locals and visitors alike. You can also order sushi right at the bar.

Kaz came by after dinner with one of his deadly concoctions.

Bamboo is easy to find. It's right under the beach side of the walking bridge at Grand Cayman Beach Suites (formerly the Hyatt).

I REALLY DID LOVE THIS PLACE! martini martini

I can eat sushi every nioght of the week...anyway here are some details:

Seven Mile Beach

West Bay Road (in the Hyatt Regency)

Grand Cayman

Hours Mon.-Fri. 5p.m.-1a.m. Sat. 5p.m.-Midnight.

Bamboo

With its trendy decor and ambience, its eclectic mix of music, and most importantly, its energetic and friendly staff, Bamboo has quickly become one of the island's hottest nightspots.

This popular high-energy lounge happens to have the best sushi bar on the island. Enjoy an atmosphere of understated elegance with an Asian influence, as our staff tempts you with an elaborate array of sushi, sashimi, appetizers, specialty drinks, desserts, and much more. Your evening would not be complete without sampling a "Kazatini" or a "Red Dragon", and mingling with Cayman's social set.

On Saturdays you can listen to all your favorite jazz numbers, performed by the very talented "Intransit".

Reservations: Reservations are not accepted...TAKEN FROM THE HYATT DESCRIPTION

My husband and I went about 2 weeks ago. Prices are definitely higher then in the States with the exchange rate difference but not bad by our standard.

Rolls range from $7 to $15 CI.
