Welcome to the forum!
You don't have much time to find a place to stay! A 3 BR condo that is highly recommended by this site is the Meridian. It is very upscale. There are many others as well...check out the thread with the hotel search. I think this is the link:

I don't know of any all-inclusives except for the one that's closing but I may be wrong. One of the main reasons for lack of all-inclusives is the wealth and excellence of the restaurants. Another reason is, unlike some of the poorer Caribbean islands where tourists are basically relegated to the resort for safety reasons, Grand Cayman is just .... different. The island is safe, the standard of living is high. You have the freedom to explore the entire island which is not conducive to all-inclusives. I agree, though, that feeding 7 people is cost prohibitive as restaurants can be somewhat pricy. Pay attention to the coupons the Activity Guide has and the check the food section on this site. Renting a condo would be your best bet I think.
I arrive the same day you do! We will stay for 7 nights at a condo on the East End part of GC. If interested you are welcome to stop and check out "my" laid back part of Grand Cayman!
