I'm sorry to say that I don't think you will be able to do both in the same day with your itinerary. I say this because I'm pretty sure that the Pampered Ponies offers three different times for their rides - Early Morning, Sunset and Moonlight Rides. That would mean that your only chance would be the Early Morning Ride, but I don't know what time it actually is. I'm guessing that it is just too hot in the afternoons to ride the horses.......
Now, Soto's has two trips....one is 9:30 to 11:30 and the other is 1:00 to 3:00. I think the afternoon trip is cutting it a little too close for you to be able to make it back to the terminal in order to catch the tender back to your ship. Not sure when they want you back on the ship, but it could by 3:00 or the very latest, 3:30 p.m. That's cutting it way too close. So, that leaves the morning Soto's trip, which would work out perfectly for you.
Sorry! Maybe someone else has more information and knows of a way that you could do both, but I'm thinking you cannot. If you can only do one, I would highly recommend the Soto's Sting Ray City trip --- that's the one activity that you just can't do anywhere else. Taking the morning trip would leave plenty of time to go to 7 Mile Beach or do some more snorkeling or shop before getting back on the tender.
Guess you'll have to come back to Cayman for a whole week in order to fit everything in!
