I'm glad that you're going to give Grand Cayman a try! I know you'll love it!
In regards to your question about taking shells home.......as Paul71a has pointed out, much of the Cayman Islands is a protected Marine Park with some very strict rules that are meant for preserving the beauty for everyone for years to come. That's definitely a good thing.
However, I just reread the Conservation Laws before posting this, just to be sure, and I really think that the rules apply mostly to things that are found in the water. It's absolutely forbidden to take home anything dead or alive "from Cayman waters". But, I think as long as you just take a few unusuable old shells or pieces of dead coral that have been washed up on the beach, that it's really ok. The Marine Laws even say that visitors can take home up to 3 conch shells each without a permit.....people do that all the time.
