Probably a good idea to do a hike in the morning, but I think you will also encounter quite a bit of traffic heading down towards Georgetown in the morning hours....especially between 7 and 9 (?). However, there is a new road now, and I think that will really help you.......check it out on our map of 7 Mile Beach..... . You will be staying even further north than this map shows, but as soon as you can cut over to the new road, I would do it. Then, you will need to wind your way to the South Side (without going through Georgetown) and head towards the Frank Sound Road. I think most of the traffic will be headed in the opposite way while you are heading East. If you look at this map of Grand Cayman from the Activity Guide, you'll see that the start of the Mastic Trail is off of the Frank Sound Road, just south of the entrance to the Botanical Gardens. I think that's where it starts, although I've never done the hike myself.
To answer your real question as far as how long it will take to drive there in the morning, I guess I would plan on at least 45 minutes from where you are staying.
