Welcome to the forum DanS1 ,
I'm so glad that you enjoyed your brief visit to Grand Cayman years ago, enough to want to come back now for a longer stay. You'll have a ball!
First of all, the number of ships in port on the day you arrive shouldn't have any effect whatsoever on what you plan on doing. Crowds from cruise ship passengers mostly impact the stores downtown or the tourist attractions. You'll be fine.
However, the length of time it takes you to go through Immigration and then Customs, after collecting your bags, will depend entirely on how many other planes have landed at that same time. I've landed there in heavy times and light times and it never really takes that long......maybe 30 minutes....maybe less.
The car rental agencies are all in walking distance. Again, depending on how many other people happen to be at the counter ahead of you determines how long that will take.
The grocery stores are always busy on Saturdays, but they're open till 10 or 11 at night, so you don't need to rush. In fact, if I were you, I'd go check in at your condo first and then go the grocery store and liquor store at your leisure....(liquor stores do close at 6 or 7 pm though).
